Rum Jungle Porterhouse

Rum Jungle beef is raised in the Northern Territory of Australia, where cattle graze free-range across some of the most open country on earth. The beef is processed at the Rum Jungle facility south of Darwin and is sold as halal, which is one of the reasons we chose it for Maldivian kitchens. Each porterhouse is cut bone-in, vacuum-sealed and frozen at peak freshness, so what arrives at your door is exactly what left the plant.

Know your cut

Look at the steak and you'll see the T-shaped bone dividing it. The larger side is the strip loin firm, deeply beefy, with fine marbling that renders as it cooks. The smaller side is the tenderloin the most tender muscle on the animal. The bone in between isn't just for show: it slows the cooking around it and keeps both muscles juicy. Because the tenderloin cooks faster, always position that side away from the hottest part of the pan.

Thawing (the step most people rush)

Move the steak from the freezer to the fridge 24 to 36 hours before cooking and leave it in its packaging. Slow thawing keeps the juices in the meat instead of on the plate. Never thaw in warm water or on the counter — in Malé's heat that's a food-safety problem as much as a quality one. Take it out of the fridge 30 to 45 minutes before cooking so the centre isn't ice-cold when it hits the pan.
